Homemakers Exchange, a cooking show hosted by Louise Leslie, aired on CBS from 1949 to 1952. Recipes made on the program were compiled into booklets for home use.

The fourth volume from the series, which we offer here, covers the months of July, August, and September, 1950.

Nothing too stuffy among them, the recipes include:

  • Acorn squash with sausages 
  • Luncheon meat casserole, which includes spaghetti noodles, condensed mushroom soup, and sliced lunchmeat
  • Lettuce rolls stuffed with cottage cheese, raisins, celery, walnuts, and pimentos
  • Tuna fish salad with potatoes, peas, snap beans, beets, and mayonnaise
  • Icebox cookies of only three ingredients—peanut butter, chocolate chips, and corn flakes

Emblematic of a particular type of American cuisine in the ‘40s and ‘50s that network execs felt compelled to target. Stereotypical, but emblematic, nonetheless.
